Method
Start by placing 6-8 sage leaves in the bottom of a mixing glass and add gin. Lightly muddle to infuse the gin with sage then take out the sage. Add pineapple sherbet and stir until mostly smooth. Add sparkling wine and stir again to combine and pour into a coupe. Garnish with sage and enjoy!
