Cucumber Melon Ginsicles

4Oz
Empress 1908 Cucumber Lemon Gin
8Oz
Coconut Water
1.5Oz
Fresh Lime Juice
3CUPS
Honeydew, diced (half a large melon)
1CUPS
Cucumber, sliced and peeled
8LEAVES
Mint
0.125TSP
Xanthan Gum (optional - this helps suspend the mint pieces so they don’t all float to the top of the mold)

Method

Juice and strain the honeydew. Blend the cucumber with lime juice, pour into a glass and allow to sit for about a minute, then scoop off the foam that forms on top (the foam can make the popsicles too soft to come out of the mold, so this step is important). Blend the gin, coconut water, mint leaves, and xanthan gum. Gently stir the blender contents with the honeydew juice and cucumber lime mixture. Fill the popsicle molds, freeze for two hours, add the sticks, then continue to freeze overnight.
