Our Favourite Fall Cocktails
Cozy Up with One of Our Fall Favourites
At last, fall is upon us, and we are so ready for it! The turning leaves, cool, crisp air, and darker nights spent cozied up inside make the season one of our favourite times of year. With the autumn harvest of crops and fruits comes endless possibilities for delicious sips to satisfy your taste. Read ahead for a sampling of our tried and true fall cocktails, along with some new soon-to-be seasonal favourites!
The Orchard
With the warmth of sweet vermouth, herbal notes of rosemary and thyme, and the crisp finish of dry apple cider, ‘The Orchard’ is perfect for those chilly autumn evenings!

Ingredients
- 2 oz Empress 1908 Gin
- ½ oz Sweet Vermouth
- ¾ oz Lemon Juice
- ¾ oz Rosemary Thyme Syrup
- 2 oz Dry Apple Cider (To Top)
Method
Shake ingredients on ice and strain into a chilled collins glass. Top with cider, and garnish with thyme or rosemary and lemon wheel.

To make the rosemary thyme syrup, combine 1 cup of sugar and 1 cup of water in a small saucepan over medium heat. Bring to a boil and stir until the sugar dissolves completely. Reduce heat, and add 3-4 fresh rosemary sprigs, and 3-4 fresh thyme sprigs. Simmer for 10-15 minutes, or until desired flavour is reached. Cool, strain, and store in a sealed container in the refrigerator for up to two weeks.
It’s Thyme to Dream
Created by the talented @cocktailswithmenyc on Instagram, the ‘It’s Thyme To Dream’ is an elevated, seasonal take on the classic Tom Collins. The unique flavour & texture of figs make them oh-so fun to mix with; pick some up at your local store and start dreaming of this delicious sip today!
Ingredients
- 1½ oz Empress 1908 Gin
- 1 oz Fig Syrup
- 1 oz Lemon Juice
- Soda Water (To Top)
- Sliced Fig & Thyme Sprigs
Method
Build in a cocktail glass, layering Empress 1908 Gin last. Stir, and enjoy!

Spanish E&T
Our very own twist on the classic Spanish Gin & Tonic, this simple and stunning recipe brings all our favourite autumnal spices to the spotlight! With cinnamon, cloves, anise and dehydrated grapefruit, it’s a summer-to-fall cocktail that packs a seasonal punch.
Ingredients
- 2 oz Empress 1908 Gin
- 3 oz Premium Tonic Water
- 2 Dash Angostura Bitters
- Cinnamon Stick
- Star Anise
- Whole Cloves
- Dehydrated Grapefruit
Method
Build in a copa glass over ice, adding gin first, followed by the bitters & tonic. Garnish with a cinnamon stick, star anise, whole cloves and dehydrated grapefruit.
Sweet Peach Tea
Sweet peach, rich walnut and familiar black tea— this mid-season cocktail is the perfect way to say goodbye to summer, and hello to fall!
Ingredients
- 1½ oz Empress 1908 Gin
- 1 oz Black Tea
- ¾ oz Peach Liqueur
- ¾ oz Lemon Juice
- ½ oz Honey Syrup
- 2 Dash Walnut Bitters
- Peach Slices
Method
Shake ingredients on ice. Strain into a cocktail class over fresh ice. Garnish with peach slices.
