The Sovereign Swizzle

1.5Oz
Empress 1908 Indigo Gin, to float
0.75Oz
Overproof Rum
1Oz
Fresh Lime Juice
0.5Oz
Pineapple Juice
0.75Oz
Orgeat Syrup
4DASHES
Tropical Spice Bitters
Fresh Mint and Grated Nutmeg, for garnish

Method

Combine rum, lime and pineapple juices, syrup and bitters in a tall glass. Fill 2/3 full with crushed or pebble ice. Take a bar spoon and “swizzle” by twisting the spoon between your two palms. Top with more crushed ice, then carefully “float” the Empress 1908 Indigo Gin over the top. Garnish with a fresh bouquet of mint and freshly grated nutmeg.
