Empress 1908 Elderflower Rose Gin, split
1Oz
Fresh Lemon Juice
1Oz
Simple Syrup
Soda Water
Lemon Wheel
Lavender Sprigs

Method
Shake 0.5 oz gin, lemon juice and simple syrup on ice. Strain into a Collins glass over fresh ice. Top with soda leaving room to float the remaining 1 oz gin on top. Garnish with a lemon wheel and lavender sprig.
Notes
To float the gin, pour slowly over the back of a bar spoon to ensure the layers remain separate. Be sure to stir before enjoying!
