Method

Add Empress 1908 Indigo Gin, lemon juice, and honey syrup to a cocktail shaker with ice. Shake until chilled. Pour half into a flute, and top with Champagne. Garnish with matching gummy bears*. Enjoy!

Notes

*To make the gummy bears, pour the other half of the cocktail into a bowl and sprinkle two ¼ oz packets of unflavoured gelatin to the drink mixture and allow it to bloom for five minutes. For extra magic, place a small piece of edible gold leaf in each cavity of a silicone gummy bear mold. Stir the gelatin mixture plus 1 tbsp honey over low heat until fully dissolved. Place the gummy bear mold on a cutting board and use an eyedropper to fill each cavity; transfer to the fridge and allow to set for a few hours.
