Empress 1908 Indigo Gin
0.5CUPS
Peach Nectar
0.25CUPS
Coconut Milk
1CUPS
Frozen Peaches
0.5Oz
Peach Simple Syrup*
Fresh Peach Slice & Mint, for garnish

Method

Add coconut milk, peach nectar, simple syrup, frozen peaches, gin, and a handful of ice cubes to a high speed blender and blend until smooth. Pour into a cocktail glass and garnish with a fresh peach slice and fresh mint. Serve immediately and enjoy!

Notes

*To make syrup, combine ½ cup of water and ½ cup of sugar in a sauce pan and whisk together. Add ¾ cup sliced peaches and bring to a boil over medium heat, stirring occasionally. Once boiling, remove from heat and let sit for 45 minutes. Pour the mixture through a fine mesh strainer into a bowl, making sure to push the fruit down during the process. Transfer the liquid to a clean glass jar and keep refrigerated until ready to use.
