Empress Mango Spritz

Soda Water, to top

Method

In a shaker, muddle the mango, lemon juice, and ginger syrup until the flavours meld and the mango resembles a juicy puree. Pour the mixture into a glass. Add ice cubes and top with soda water. Finish by pouring Empress Indigo Gin over the top. Garnish with a lemon slice and serve chilled. Stir before enjoying!

Notes

*For the syrup, combine ½ cup sugar, ½ cup water, 1 inch grated ginger, and a generous pinch of saffron in a saucepan. Simmer until the sugar dissolves. Allow to cool before using.
