Start your spring and summer fresh with these three herbal syrups!

The sun’s coming out and that means fresh herbs! Use up what’s growing in your garden and create a selection of syrups— an easy way to level up your cocktails at home. We’ll teach you to create three different sweeteners, each introducing a new twist.

1. Lemon Thyme SYRUP

First, let’s start light and refreshing with a lemon thyme syrup. Here is your opportunity to mingle the bright notes of citrus and herbs into your cocktails! 

INGREDIENTS:

  • 1 cup water
  • 1 cup sugar
  • 1 lemon, thinly sliced
  • 2 tablespoons fresh thyme

METHOD:

  1. Firstly, add sugar & water to a small saucepan on medium-high heat and stir to combine. 
  2. Next, add lemons and cook for 3 minutes.
  3. Then, remove from heat, stir in the thyme, and allow to cool to room temperature.
  4. Finally, strain and store in a sealed container in the refrigerator for up to 2 weeks.

2. Salted Rosemary SYRUP

Our next herbal syrup adds lovely savoury notes and aromatics to your spring and summer sips. By swapping out the choice of sweetener, you can contribute even more depth of flavour to your cocktails like rich molasses. Feel free to swap out rosemary with any other savoury herb like thyme or oregano for further complexity!

INGREDIENTS:

  • 1 cup turbinado sugar
  • 1 cup water
  • 1 tsp sea salt
  • 2 sprigs of rosemary

METHOD:

  • Firstly, add sugar, water, and salt to a small saucepan on medium heat and stir to combine. 
  • Next, reduce heat and add rosemary sprigs. Simmer for 30 minutes.
  • Finally, strain and store in a sealed container in the refrigerator for up to 2 weeks.

3. Smoked Sage Honey SYRUP

Finally, let’s go a bit more daring for the season with smoked sage honey syrup! By charring the herbs and using honey, you can transform the flavour profile of your cocktail without too much difficulty.

INGREDIENTS:

  • 1 cup honey
  • ½ cup water
  • 1 sprig of sage

METHOD:

  1. Firstly, add honey & water to a small saucepan on medium heat and stir to combine. 
  2. Next, reduce heat and lightly char your sprig of sage. Add leaves to the pot and simmer 10-15 minutes.
  3. Then, remove from heat and cool 30 minutes.
  4. Finally, strain and store in a sealed container in the refrigerator for up to 2 weeks.
