Did someone say gin popsicles?

What better way to cool off for the summer than a batch of delicious gin popsicles? Last August, we asked a number of talented mixologists, foodies & photographers to show us their favourite frozen treat featuring Empress 1908 Gin! The results were tastier than we could have imagined— if you’re looking to beat that heat, we highly recommend doing so with a gin popsicle in hand!

Read on to find some of our favourite recipes of the bunch, along with must-know tips & tricks on making sure your icy creations come out perfectly!  

Tip one: choosing the right mold! 

Though most popsicle molds will work just fine, we’ve found silicone molds to be the most effective & easy to use! The pliable nature of silicone makes removing the sometimes-delicate popsicle simple. Plus, they’re dishwasher safe and built to last! 

Tip two: a balancing act of ingredients! 

If you’ve tried out our recipes and want to create your own, keep in mind the quantities of your popsicle ingredients. Add too much gin and your frozen treats won’t freeze! For each batch of 10, we recommend following a ratio of about 4 oz of gin to every 26 oz of additional liquid (i.e. grapefruit soda, tonic water, iced tea, etc.) 

Tip three: the delicate removal! 

Once your popsicles are frozen and ready to eat, it’s time to remove them from the molds! Instead of running the mold under warm water (this may cause melting), simply let them sit at room temperature for a few minutes. Then, gently push from the bottom of the mold and pull the popsicle out!

Paloma Popsicles

INGREDIENTS:

  • 4 oz Empress 1908 Gin
  • 2½ oz Fresh Lime Juice
  • 24 oz Grapefruit Soda
  • Pinch Kosher or Flaked Salt

METHOD: Mix all ingredients in a container or pitcher at least 1L in size. Stir and pour into the popsicle mold. Freeze for a minimum of 6-8 hours. Remove the popsicles from the freezer and let sit for a few moments before slowly pulling them from the molds. Avoid using hot water to remove as this will encourage melting. Lightly sprinkle with flaky or kosher salt, and enjoy!
