Vanilla Pear Gin Fizz
Juicy pear, aromatic spices, and a fizzy soda finish— we’re getting in the fall spirit with @carneliancooks’ Vanilla Pear Gin Fizz!

Method
Rim a large rocks glass with vanilla sugar or brown sugar. Set aside. Add Empress 1908 Indigo Gin, vanilla pear simple syrup, and lemon juice to a shaker with ice. Shake until chilled. Strain over with ice into your prepared glass. Top with soda water, and garnish with a pear slice and thyme sprig.
Notes
*To make the syrup, combine 1 chopped Bosc or Bartlett pear, ½ cup granulated sugar, ½ cup water, and 1 split vanilla bean (seeds scraped out) in a pot over medium to high heat. Stir and simmer for 2 to 3 minutes. Remove from heat and let it cool. Once cooled, strain out the solids, and add the syrup to your cocktail.
