Plum & Cardamom G&T

Method
In a cocktail shaker, muddle together diced plum and cardamom syrup. Add ice followed by the gin and bitters. Shake to chill and strain into a glass filled with ice. Top with tonic and garnish with thinly sliced plums.
Notes
To make the cardamom simple syrup combine ½ cup each of water and sugar in a small saucepan and heat on low. Use the side of a chef’s knife to crush the cardamom pods. Once the sugar has melted, add the pods and seeds to the sugar mixture and simmer for 15 minutes. Remove from heat and allow to cool. Once cooled, pour the mixture through a fine mesh strainer to remove the pods and seeds and refrigerate until ready to use. Syrup will keep in the fridge for a few weeks.
