Method

To a cocktail shaker, add Empress 1908 Indigo Gin and strawberries, and muddle. Add Campari, lime juice, simple syrup, and egg white. Shake with ice, then dry shake (without ice). Pour into a coupe glass and garnish with dehydrated strawberry powder.

Notes

*To make the strawberry shrub, add 250g chopped strawberries and 125g cane sugar. Seal the bag and let sit at room temperature for 24 hours. Afterwards, strain the strawberry-sugar mixture into a bowl, removing solids. Add 125g white balsamic vinegar, and stir to combine. Transfer the strawberry shrub to a clean, airtight bottle and store in the refrigerator.
