Empress Side Royale

Method
In a mixing glass, add a bundle of mint leaves and jasmine simple syrup. Lightly muddle. Then add Empress Cucumber Lemon Gin, lime juice, and bitters. Add ice to the glass and stir. Strain into a champagne flute, top with prosecco, and garnish with mint & cucumber roll on a cocktail pick. Enjoy!
Notes
*To make the jasmine simple syrup, combine one cup each of sugar and water. Bring to a low simmer, and stir. Add two jasmine tea bags and continue to let simmer for around two minutes. Take off of heat, and allow to cool to room temperature. Keep stored in the refrigerator for up to two weeks.
