Empress 1908 Elderflower Rose Gin
2Oz
Simple Syrup
Juice from One Lemon
1CUPS
Coconut Water
Scoop of Vanilla Ice Cream, per serving
Red Currants, for garnish
Method
Mix together the gin, syrup, coconut water and lemon juice and pour into a shallow dish and freeze at least 4 hours or overnight. Then scrap with a fork, resulting in ice shavings. To serve, place one scoop of ice cream on the bottom of a cocktail glass. Top with the granita and garnish.
