Coconut Cordial*
Half of a Lemon, quartered
Quarter of a Lime
Mint, plus more for garnish

Method
In the chilled glass, muddle mint with the Coconut Cordial, add citrus and muddle again. Add the gin and then pebbled ice. Agitate to combine all the ingredients and top with more pebbled ice. Garnish and enjoy!
Notes
*To make the cordial, mix together 1 cup of cream of coconut and 5g citric acid until fully combined.
