Cucumber Lemon Sorbet

In a blender, add simple syrup, lemon juice, and chopped cucumber. Blend until smooth. Pour liquid through a strainer to strain out some of the solids. Add liquid to ice cream maker until the mixture thickens, about 25 to 30 minutes. Add in limoncello and Empress Cucumber Lemon Gin and continue to churn for an additional two minutes. Transfer the sorbet into a freezer safe container and freeze for an additional 2 hours if a firmer texture is desired. Enjoy!
Notes
*To make the mint simple syrup, combine ¾ cup of sugar with ¾ cup of water. Bring to a low simmer, and stir. Add a small bundle of mint sprigs and continue to let it simmer for around two minutes. Take off of heat, and allow to cool to room temperature.
