Time to say goodbye to the sunshine of summer and hello to the flavours of fall!
With any change in seasons comes that transitional time that might leave you wondering what exactly to sip on— it’s a little too warm to pull out the oversized sweaters, but a bit too cold to venture out to the beach! We’re here to help you bridge the gap with our favourite gin cocktails that feature a little bit of summer and a little bit of fall.

Apple Cider Collins
Let’s start by mixing with some of our favourite autumn flavours with this refreshing, yet cozy sip by @thegandmkitchen! Boasting an irresistible melange of spices, robust herbaceousness, and juicy orchard fruit, this Collins is a must-make for when you witness the first fallen leaves of the season.
INGREDIENTS
- 1½ oz Empress 1908 Indigo Gin
- ½ oz Fresh Lemon Juice
- ½ oz Rosemary Syrup*
- 2 oz Spiced Apple Cider
- 2-3 oz Club Soda or Sparkling Water
- Apple Slice & Rosemary Sprig, for garnish
- Peach Slices, for garnish
METHOD
Fill a spritz or a collins glass with ice. Add the gin, lemon juice, syrup, and apple cider and stir to combine. Top with the soda or sparkling water and garnish with an apple slice and rosemary sprig.
*To make the rosemary syrup, combine ½ cup each of sugar and water along with 3-4 rosemary sprigs in a saucepan and heat over medium heat until the sugar has dissolved. Let cool, strain into a sealed container, and keep stored in the fridge for up to two weeks.
Fig & Thyme Cocktail
Is there anything more wonderful for fall than the deep sweetness of fresh figs? @delight.fuel wastes no time putting this fall fruit to use by combining it with the savoury herbaceousness of thyme. This recipe serves two, so grab your favourite cocktail companion and raise a toast to autumn!
INGREDIENTS
- 4 oz Empress 1908 Indigo Gin
- 10-15 Black Figs
- 2-3 tbsp Thyme Syrup*
- 8 oz Club Soda
- 2 tbsp Fresh Lemon Juice
METHOD
In a measuring cup muddle figs with thyme syrup and lemon juice. Strain, and add this mixture to an ice-filled glass. Top off with club soda and Empress 1908 Indigo Gin. Stir and garnish with fresh thyme and figs. Enjoy!
*To make the syrup, add ½ cup agave syrup, ¼ cup water, and 2 fresh thyme sprigs to a small saucepan. Simmer over low heat for about 10-15 minutes. Take out fresh thyme and set aside to cool.
Cucumber & Pear Gimlet
Gimlets are always such a staple for summer, but why not add a touch of fall deliciousness here? @the.boozy.ginger changes up this classic with a splash of pear juice that perfectly complements the vibrant profile of our Empress Cucumber Lemon Gin!
INGREDIENTS
- 2 oz Empress 1908 Cucumber Lemon Gin
- ½ oz Simple Syrup
- 1 oz Pear Juice
- ½ oz Fresh Lime Juice
- 3-5 Cucumber Slices, to muddle
- Cucumber Ribbon & Pear Slice, for garnish
METHOD
Add simple syrup and cucumber slices to a cocktail shaker and muddle. Add remaining ingredients to a cocktail shaker with ice and shake until chilled. Strain into a coupe, garnish, and enjoy!
Apple Butter Party Punch
Need a seasonal batched cocktail for a crowd? @healthylittlepeach has you covered with this punch packed with the fall flavours we all know and love! The gentle botanicals of our Empress Elderflower Rose Gin along with the warming spices and sweet apples are sure to dazzle upon first taste. Recipe serves 13.
INGREDIENTS
- 1½ cups Empress 1908 Elderflower Rose Gin
- 6 cups Apple Cider
- 2 cups Sparkling Apple Cider
- 1½ cups Ginger Ale
- 2 cups Orange Juice
- 1 cup Apple Butter
- 1-2 Apples, sliced
- 7-8 Cinnamon Sticks
METHOD
In a large pitcher or punch bowl, combine the apple cider, sparkling apple cider, ginger ale, orange juice, and Empress Elderflower Rose Gin. Stir well to combine. Gradually whisk in the apple butter until it is fully dissolved into the liquid mixture, ensuring no clumps. Slice the apples and add them to the punch along with the cinnamon sticks for flavour and presentation. Refrigerate the punch for at least 1–2 hours to let the flavors meld and serve it cold. To serve, pour into glasses and garnish each with a slice of apple and a cinnamon stick if desired. Enjoy!
Peachy Keen Elderflower Rose Spritz
Finally, we’re ending off with a recipe featuring peaches and elegant florals! While sipping on this refreshing spritz, @thesweetandsimplekitchen reminds us that even though it’s hard to resist that summertime sun, the transitioning of seasons introduces a new beauty that’s just as peachy.
INGREDIENTS
- 2 oz Empress 1908 Elderflower Rose Gin
- 2 oz Fresh Peach Puree
- 1 oz Fresh Lemon Juice
- ½ oz Honey or Simple Syrup
- 2 oz Ginger Beer or Soda Water
- 1 Peach Wedge, to garnish
- Sugar, for rim
METHOD
Run a lemon wedge along the rim of the cocktail glass and dip in a plate of sugar to coat the rim evenly. Fill the glass with ice. Add peach puree, lemon juice, honey and soda water (or ginger beer). Stir to combine ingredients. Pour Empress 1908 Elderflower Rose Gin to float on top. Garnish with a fresh peach slice. Stir before enjoying!
