Cucumber Rose Collins
@bitesizedstudio is back with a new springtime fave! With refreshing cucumber and fragrant honey rose syrup, this pretty pink Tom Collins riff is the ideal patio sipper.
Add the cucumber slices, lemon juice, and honey rose syrup* to a cocktail shaker and muddle. Add the Empress Indigo Gin and fill the shaker with ice. Shake to chill and combine, and strain into a glass with ice. Top with sparkling water and garnish with a cucumber ribbon or rose.
*For the syrup, add ⅓ cup of rose water and ⅓ cup honey to a small saucepan over medium-low heat. Stir over heat for 2-3 minutes, until the honey has dissolved.
