One of our summer staples, this sip will surely quench your thirst on a sweltering day by combining crisp watermelon, lime, and basil. Such a delightful mix of fruits and herbs!

This early 20th century classic combines fresh raspberries and spicy ginger beer for a wonderfully light highball that you need on a hot day. Our friends at @afullliving elevate this further with a fun floral twist in their ice and garnish for soft layers of flavour!

  • 1 oz Fresh Lime Juice ⁣ ⁣
  • 1 oz Raspberry Syrup
  • 2½ oz Ginger Beer⁣
  • Floral Ice Cubes (optional)
  • Edible Flowers, Chamomile, & Lime Wheel, to garnish

Add Empress 1908 Indigo Gin, lime juice, and raspberry syrup to a mixing glass or cocktail shaker with ice and mix or shake to chill. Strain into a cocktail glass over ice, then top with ginger beer. Garnish with edible flower petals, chamomile, and a lime wheel. Enjoy!

Next, we have this stunner of a sip that makes use of a summer staple: rhubarb! Paired with vibrant raspberries and lengthened with prosecco for an added touch of elegance, it’s bound to wow a crowd at your next garden party.

  • 1½ oz Empress 1908 Elderflower Rose Gin
  • 1½ oz Raspberry Rhubarb Syrup*
  • 4 oz Prosecco
  • Squeeze of Fresh Lemon
  • 2 dashes Orange Bitters
  • Rhubarb Ribbon & Sprig of Mint, to garnish

Combine all ingredients except Prosecco in a cocktail shaker with ice. Shake until chilled, then strain into a chilled coupe glass. Garnish with a rhubarb ribbon and a sprig of mint.

*To make the syrup, combine 1 cup raspberries, 1 cup diced rhubarb, ½ cup granulated sugar, and 1 cup water in a small saucepan. Over medium heat, stir until sugar is dissolved. Then simmer until berries and rhubarb break down into a pulp and mixture thickens. Remove from heat, fine strain, bottle, and refrigerate for up to two weeks.

Have you ever had matcha in a cocktail? We just love the earthy notes it offers, especially when paired with the vegetal notes of our new Cucumber Lemon expression! Soothing, complex, and refreshing – this recipe makes for a wonderfully unique sipping experience.

  • 1½ oz Empress 1908 Cucumber Lemon Gin
  • ¾ oz Fresh Lemon Juice
  • ¾ oz Matcha Syrup*
  • Soda Water, to top
  • Edible White Flower, for garnish

Shake all ingredients (except for soda water) over ice and serve in ice-filled collins glass. Top with soda water and garnish with edible flower.

*To make matcha syrup, combine 150g each of sugar and water and 1 tsp of matcha powder to a saucepan over medium heat until incorporated. Let cool, seal in container, and store for up to 2 weeks in the fridge.

Last but not least, this highball boasts an incredible burst of citrus from grapefruit to highlight our botanical recipe, as well as zesty and floral notes from passion fruit – one of our favourite fruits for summer!
