After a long winter— spring is here! We can’t think of a better season for fresh ingredients, vibrant flavours and stunning natural hues. From edible flowers to home-grown herbs, spring bounty lends itself to extra-delicious cocktail creations. Read on to check out our signatures favourites!

1. GARDEN CITY
Named after our hometown of Victoria, BC, the Garden City’s flavours are as colourful as flowers in full bloom. Sip this perfect mix of vibrant citrus and balanced sweetness all season long!
Ingredients
- 1½ oz Empress 1908 Gin
- 1 oz Grapefruit Juice
- ½ oz Lemon Juice
- ½ oz Lychee Syrup
- Soda Water To Top (optional)
- Grapefruit Slice
- Edible Flowers
Method
Shake grapefruit juice, lemon juice and lychee syrup on ice. Strain into a chilled collins glass with ice. Layer the gin into the glass and top with soda water (optional). Garnish with a grapefruit slice and edible flowers.
2. Cool As A cucumber
A fresh twist on the beloved gimlet cocktail, the Cool As A Cucumber brings tart, herbal flavours into the spotlight.
Ingredients
- 1½ oz Empress 1908 Gin
- 1 oz Lemon Juice
- 1 oz Simple Syrup
- 5 Cucumber Slices
- 6 Basil Leaves
- Cucumber Ribbon
Method
Muddle the cucumber slices in the bottom of your shaker. Add the remaining ingredients and shake on ice. Strain into a chilled rocks glass. Garnish with a basil leaf and cucumber ribbon.

3. Garden 75
A refreshing spring twist on the effervescent Empress 75, this cocktail pulls flavours straight from the garden! Use your favourite floral honey syrup to add a personal touch.
Ingredients
- 1½ oz Empress 1908 Gin
- ½ oz Lavender Honey Syrup
- ¾ oz Lime Juice
- 1 tsp Orange Blossom Water
- Sparkling Rosé (to top)
- Lavender Sprig & Edible Flowers
Method
Shake gin, lime juice, honey syrup and orange blossom water with ice. Strain into a Nick & Nora glass. Top with sparkling rosé and garnish with dried flowers.

4. Spring Fever
Add a punch of vibrant citrus to the classic Bees Knees with this refreshing recipe. Featuring tangy grapefruit soda, delicate honey and a pop of fresh lemon, it’s the perfect drink for sipping in the sun!
Ingredients
- 2 oz Empress 1908 Gin
- ¾ oz Lemon Juice
- ½ oz Honey Syrup
- 2 oz Grapefruit Soda
- Lemon Wheel
Method
Shake 1 oz of Empress 1908 Gin, the lemon juice and honey syrup on ice. Strain into a copa glass on fresh ice. Add 2 oz of grapefruit soda and layer the remaining 1 oz of Empress 1908 Gin on top. Garnish with a lemon wheel.
