4 Must-Know Holiday Syrup Recipes
Elevate your holiday cocktails with four easy homemade syrups!
Cocktail party season is near— what better time to step up your home bartending skills? We’re here to share our ‘simplest’ tip: having a selection of holiday simple syrups on hand!
From warming spices to rich fall fruits, the choice of ingredients this time of year make for exceptionally tasty results. Read on for four easy-peasy recipes to get you in the festive spirit, and, of course, our favourite drinks to use them in!
1. CLOVE SYRUP
If holiday spices are your flavour of choice, this almost-too-simple clove syrup is a must-have on hand. All you need is sugar, water and an ounce of whole cloves to bring a wintery warmth into your next cocktail creation!
INGREDIENTS:
- 1 cup sugar
- 1 cup water
- 1 ounce whole cloves
METHOD:
- First, add sugar and water to a small saucepan on medium heat and stir to combine.
- Next, reduce heat and add whole cloves. Simmer 10-15 minutes.
- Then, remove from heat and cool 30 minutes.
- Finally, strain, and store in a sealed container in the refrigerator for up to 2 weeks.

2. ROSEMARY SYRUP
Rosemary syrup makes the perfect addition to homemade cocktails all year round! Swap it out with your favourite holiday herb for a personal twist on the recipe below.
INGREDIENTS:
- 1 cup sugar
- 1 cup water
- 3-4 fresh rosemary sprigs
METHOD:
- Add sugar & water to a small saucepan on medium heat and stir to combine.
- Reduce heat to medium-low and add rosemary.
- Simmer 10-15 minutes, or until the desired herbal flavour is reached.
- Remove from heat, and rest until cool.
- Finally, strain, and store in a sealed container in the refrigerator for up to 2 weeks.

3. CINNAMON SYRUP:
Similar to the previous clove syrup recipe, cinnamon syrup adds a touch of warm holiday spice to any seasonal cocktail. Pair it with a cinnamon stick garnish for that extra dash of flavour!
INGREDIENTS:
- 1 cup water
- 1 cup sugar
- 3-4 cinnamon sticks
METHOD:
- Firstly, add sugar & water to a small saucepan on medium heat and stir to combine.
- Next, reduce heat and add cinnamon sticks. Simmer 10-15 minutes.
- Then, remove from heat and cool 30 minutes.
- Finally, discard the cinnamon sticks, and store in a sealed container in the refrigerator for up to 2 weeks.

4. FIG SYRUP:
What to do with your fall fig harvest? Make a tasty syrup! This recipe is rich, fruity and a favourite for even the simplest of sips. Try it in our twist on the classic Tom Collins below!
INGREDIENTS:
- 1 cup water
- 1 cup sugar
- 4-5 fresh figs, sliced
METHOD:
- Add sugar & water to a small saucepan on medium heat and stir to combine.
- Next, reduce heat and add sliced figs. Simmer 10-15 minutes.
- Then, remove from heat and cool 30 minutes.
- Strain out the figs and store in a sealed container in the refrigerator for up to 2 weeks.
