Create Stunning Layered Cocktails with Empress 1908 Gin
If you’ve been following along on Instagram you’ll know we at Empress 1908 are big fans of a layered cocktail. The beautiful gradient of colours is a showstopper that never gets old. Read on to learn how you can recreate this gorgeous presentation at home— it’s easier than it looks!
Tools you’ll need:
- Spoon
- Pour spout (optional)
- Ice
- Chilled glassware
- Cocktail recipe with ingredients in varying density
Must-know tips before you begin!
Density: to successfully layer a cocktail, it’s important to be aware of the general density of your ingredients. Higher density liquids should always be poured first. This could include syrups, liqueurs or fruit juices. Lower density liquids should be poured last, including spirits, sparkling waters or wines. If your goal is to have multiple layers, order the liquids from most dense to least dense and they should separate naturally!
Ice: keeping things cool is essential to the perfect layers! If you’re aiming from an ‘ombré’ look (as seen in the Empress Lavender Lemonade) we recommend using crushed or pebbled ice. As the top layers slowly move through the ice, you’ll get a stunning gradient effect. If you’re hoping for a clean float, you can use a large cube or well ice, however, you’ll need to be mindful of the next steps to get this one right!
Slow & steady: wins the layering race! When pouring the top layers in particular, using a slow steady hand is key. You can help control the flow by using a spout or pouring the liquid of the back or a spoon pressed against the inside of your glass.

INGREDIENTS:
- 1½ oz Empress 1908 Gin
- 1 oz Unsweetened Pineapple Juice
- ½ oz Lemon Juice
- ½ oz Orgeat
- Pineapple Slice
METHOD: Shake all ingredients except gin with ice. Strain into a collins glass with crushed ice. Layer gin on top. Garnish with a pineapple wedge.
